Ingredients
- 1/2 cup Almond meal
- 1/3 cup Brown rice flour
- 1 cup Dates (soaked in hot water for 5mins)
- 2 tbsp Mylk (E.g. Coconut, almond, rice)
- 2 tbsp Coconut oil (melted)
- 1 tbsp Chia seeds
- 1 tbsp Cacao powder
- 1 tsp Vanilla essence
- 1/4 cup Chocolate chips (roughly chopped - optional)

Instructions
- Preheat oven to 180 degrees celcius and line baking tray with baking paper.
- In a small bowl, combine chia seeds with mylk of choice and whisk with a fork till the mixture begins to coagulate (approx. 1-2 mins), set aside.
- In a medium-large mixing bowl, whisk together all dry ingredients (almond meal, brown rice flour and cacao powder) till well combined.
- Combine wet ingredients (coconut oil, chia mixture, vanilla essence) with the dry ingredients.
- Strain water from dates and combine into the mixing bowl along with chocolate or chocolate chips (if using).
- Form mixture into cookies by taking a spoonful of mixture, rolling into a bowl and flattening gently onto the prepared baking tray.
- Bake for approx. 15 mins, remove and let cool slightly before transferring to a wire rack.
