  1. Preheat oven to 180 degrees celcius and line baking tray with baking paper.
  2. In a small bowl, combine chia seeds with mylk of choice and whisk with a fork till the mixture begins to coagulate (approx. 1-2 mins), set aside.
  3. In a medium-large mixing bowl, whisk together all dry ingredients (almond meal, brown rice flour and cacao powder) till well combined.
  4. Combine wet ingredients (coconut oil, chia mixture, vanilla essence) with the dry ingredients.
  5. Strain water from dates and combine into the mixing bowl along with chocolate or chocolate chips (if using).
  6. Form mixture into cookies by taking a spoonful of mixture, rolling into a bowl and flattening gently onto the prepared baking tray.
  7. Bake for approx. 15 mins, remove and let cool slightly before transferring to a wire rack.
