SIMPLE RAW VEGAN BLISS BALLS
Cook time: 15-20mins
Serves: 6-8
Ingredients:
* 1 cup dates (pitted and soaked in warm water for 10 mins)
* 1/2 cup cacao powder
* 1/3 cup shredded coconut (plus extra for coating)
* 1 tbs rice malt syrup
* 1 tbs chia seeds (plus extra for coating)
* 1 tsp coconut oil
Process:
1. Process soaked dates in food processor into small pieces (2-3 mins)
2. Add cacao powder and process until combined (you may need to scrape down sides)
3. Combine all other ingredients into the dates and cacao mixture and process (2-3 mins)
4. In a separate bowl combine extra shredded coconut and chia seeds for coating
5. Mold a spoonful of the date mixture into a small ball between hands and roll in coconut and chia seeds to coat. Set aside and repeat until no mixture remains
6. Refrigerate balls to firm (5 mins), then eat immediately or store in the fridge in an air-tight container.
