EASY ORGANIC VEGAN CHOCOLATE CHEESECAKE SLICE RECIPE
Cook time: 80 mins (20min prep / 60mins or overnight set time)
Serves: 12 slices
Ingredients:
Base:
* 1 cup brazil nuts
* 0.3 cup cacao powder
* 2 tbs rice malt syrup (or syrup alternative, E.g. agave nectar)
* 1 tsp salt
Filling:
* 2 cups cashews (soaked overnight or for 10mins in hot water)
* 0.5 cup cacao powder
* 0.3 cup water (use filtered water if available)
* 2 tbs rice malt syrup (or more depending on personal taste)
* 0.3 coconut oil (melted)
* 1 tsp vanilla essence
* 1 tsp salt
* 1 tbs cacao nibs (optional topping)
Process: (Please check notes prior to starting!)
Base:
1. Combine all base ingredients into a food processor and process until well combined (the mixture should look wet and will form a ball inside the processor).
2. Pour mixture into a square/rectangle tin (approx. 20cm x 10cm) and press down firmly, so the base is distributed evenly. (Use a removable-bottom type for easy removal, otherwise lay baking paper length and widthwise across the tray creating ‘tabs’ to assist with removal ~ check out Minimalist Baker for some photos on this here).
Filling:
1. Combine all filling ingredients into a food processor (ex. cacao nibs) and process until well combined and the cashews have broken down into small pieces.
2. Pour mixture over the base ingredients in the pan and gently shimmy the pan so that the mixture is evenly distributed.
3. Place the cake tin in the freezer until set (ideally overnight or approximately 60mins).
4. Once set, remove from tin, cut into slices, top with cacao nibs and serve!

* Cake tin recommendations: Use a removable-bottom type or silicone mould for the easiest removal!
