THE PERFECT HOMEMADE HAND-CUT SNACK & VEGAN MAYONNAISE RECIPE
Cook time: 20 mins
Serves: 1-2 cups
Ingredients:
Hand-cut chips
* 3 potatoes
* 1/2 tbs coconut oil (melted)
* 2tsp Paprika
* Fresh garden herbs (to taste)
* Salt (to taste)
Mayonnaise (adapted from a Minimalist Baker recipe)
* 1 cup peanut oil
* 1/2 soy milk (or dairy-free milk alternative)
* 2 tsp apple cider vinegar
Process:
Hand-cut chips:
1. Preheat oven to high heat and prepare bake tray with greasing/baking paper.
2. Wash and cut potatoes into chips and place into a bowl to toss with coconut oil and paprika.
3. Place on tray and cook for approx. 20mins on high heat (turning after 10mins).
Vegan mayonnaise:
1. Pour all ingredients into a mixing bowl and blend with a hand or immersion blender until emulsified, and the right consistency has been reached (approx. 2-3 mins)!
