  1. Prep lettuce leaves (tacos) by breaking off into individual leaves, rinsing and setting aside to drip dry in a strainer.
  2. Turn stove onto medium heat and heat 1-2 tsp of coconut oil. Once hot, saute garlic and onion in the pan (few minutes only).
  3. Add lentils and spices to the pan (plus anything else you fancy ~ E.g. spring onion, carrot.). Cook for 5mins or so, stirring occasionally. Once onion has softened, remove mixture from heat and set aside in a serving bowl.
  4. Return pan to heat and add 1-2 tsp of coconut oil. Once the oil has melted add tofu and cook till golden (1-2 mins). Once golden, ‘scramble’ the tofu by squashing into the pan with a wooden spoon or fork. Removing mixture into a separate serving bowl once done.
  5. Return pan to heat and set temp. to low. Add 1 tsp of coconut oil followed by the seeds/nuts mix. Allow mixture to toast for a few minutes before adding the tamari sauce. Stir for a minute or so longer and remove mixture and place into a separate serving bowl.
  6. Assemble tacos & eat!

Buy organic lentils and tofu from Macro organics available at all Woolworths stores.
