Instructions
  1. Preheat oven to 180C & line a baking tray with baking paper. Strain and process dates into small pieces in a food processor (approx. 1 min).
  2. Combine oats, vanilla essence, cinnamon powder and coconut mylk together in a bowl, ensuring all oats are damp to touch.
  3. Add all ingredients to the processor and blitz till well combined (approx. 1 min).
  4. Roll mixture into balls and flatten into cookie shapes, placing on a lined baking tray.
  5. Bake cookies at 180C for 5-8 minutes or until golden. Remove and let cool before serving.
