Sweet sugar-free raw organic gluten-free vegan coconut rough treats
A sweet yet sugar-free recipe infused with tropical island ingredients that’s sure to be a favourite with everyone ♡ This recipe does take a bit of coordination as there is a lot of melting and cooling involved, however if you can stick it out it’s guaranteed to provide delicious healthy sugar-free chocolate goodness!

Ingredients
Coconut Roughs
- 2 cups Coconut (shredded & toasted - optional)
- 2 tbsp Coconut oil (melted)
- 2 tbsp Rice malt syrup
- 2 tbsp Cacao butter (melted)
- 2 tbs Cacao powder
- 2 tbsp Coconut sugar
Peppermint
- 2 tbsp Coconut oil (melted)
- 2 tbsp Cacao powder
- 1 tsp Peppermint essence (can change to alternative essence if desired)

Instructions
Coconut Roughs
- In a mixing bowl, combine all coconut rough ingredients. Cover and refrigerate till the mixture is firm (this will happen once the cacao butter and coconut oil become cold; approximately 20mins).
- Once the mixture is firm, remove from fridge and shape mixture into cookies, placing onto a tray lined with baking paper. Cover and place into freezer to harden further whilst preparing icing mixture.
Icing
- Combine icing ingredients in a mixing bowl and allow to firm (place in refrigerator if desired, although check and stir every few minutes).
- Once the icing starts to hold it's shape remove the coconut roughs from the freezer and individually dip the tops into the chocolate icing, returning to the lined baking tray.
- Allow the icing to harden completely before serving.
