We’ve twisted up this island favourite a little further to bring you a delicious recipe for organic kale roti wraps that has proven to be a perfect setup for a healthy week. Tip: make them in various sizes to adapt to different meal occasions – think quick avocado & tomato snacks or easy dinner time wraps – yum!

Delicious and nutritious organic kale roti wraps! Perfect weekend meal-prep for a healthy week ahead! Made with certified organic ingredients available at our online store ♡

- 3 cups Organic plain flour
- 2 cups Organic kale (roughly chopped & de-stemmed)
- 1 cup Cold water
- 2 tbs Organic sunflower oil (or cooking oil of choice)
- 2 tsp Organic ground ginger (available at our online store)
- 2 tsp Organic cracked black pepper (available at our online store)
- In a mixing bowl, create a dough by combining the flour and water. Add water in small quantities at a time (1/4 cup) until a consistency that's not too 'dry' or 'sticky' is achieved. If too dry, add more water, and if too sticky add more flour. Set aside to rest slightly.
- In a food processor, blitz the kale & 1 tbs oil into small pieces until resembling a paste-like consistency. Once achieved mix in spices and knead into dough until well combined. Let rest if needed.
- Dust a rolling pin and bench surface with flour. Create a ball of dough between your hands (dusting with flour if necessary) and use the rolling pin to roll-out into a roti wrap. See notes for tips!
- Heat a pan over medium heat and brush each side of roti lightly with the additional oil. Place roti on pan until air pockets appear, flip and let cook an additional minute before removing and repeating with the next piece.
Technique Tips:
- Make sure your dough is not too sticky & add water if so! If the dough is sticking to your hands before attempting to roll into a roti wrap then add more flour until it's relatively easy to manage. Too much flour will make the roti dry out and crack during cooking.
- Lightly dust your rolling pin and surface before rolling each roti and be sure it's free of any 'sticky' dough break-aways!
- Flip roti whilst rolling so that both sides are rolled.
- If the dough appears inflexible let it rest.
- Try to work as quickly and lightly as possible!
