Preheat oven to 30C (if not using a dehydrator) and line baking tray with baking paper with a wire rack on top.
Dust orange wheels with cinnamon, lightly rubbing the spice into the wheel.
Place orange wheels on the rack and place in dehydrator (or oven) till the moisture content has reduced to roughly 90%. TIP: The more juice that remains the sweeter the outcome, however a higher moisture content results in a shorter shelf life.
Espresso cacao coating
In a bowl, combine all coating ingredients. Dip half of each orange wheel in coating and place on wire rack to set.
